Baby cabbage nuggets sound waaaay cooler than Brussel sprouts. Whatever it takes to get you to eat greens, amiright?! I batch roast veggies 3-4 time a week. I eat a TON of veggies, I’m a chewer. When cooking large quantities so frequently, not only am I trying to keep things simple for ease but I need variations in flavors to keep it exciting. Can’t let those tastebuds get bored! Wasn’t much rhyme or reason to this other than a half-use onion and a bag of Brussels that needed roasting. Since the big marathon of cooking is coming up in a few days (!!!) this could be a great upgrade from the boiled Brussels on your thanksgiving table you may remember as a kid 😝 #yummyAF #feedingthefrasers - Balsamic Baby Cabbage Nuggets (😜) *32oz Brussel Sprouts *half red onion, thick cut *olive oil spray *3 Tbsp Balsamic *1 Tbsp Dijon *2 Tsp Honey *S+P — chop veggies, spray baking sheet with olive oil spray and spread veggies on tray. Sprinkle with salt and pepper. Roast at 375 for 15 mins. Toss and return to oven for an additional 10-15 mins until desired doneness. — mix balsamic, Dijon and honey. Immediately after removing Brussels from the oven, pour balsamic mix over and toss. Season to taste with additional S+P
